How to preserve DOP FONTINA

 

The best place to preserve Fontina, for those who unfortunately do not have a suitable cellar or cold store with humidity control, is the household fridge.
To keep it moist, wrap the slice of Fontina carefully in aluminium foil or greaseproof paper.

 

Perfectionists can envelop the cheese in a damp linen cloth and put it on a dish covered with a bell-jar before placing it in the cool rather than the cold part of the fridge.
Remember the ideal temperature for tasting Fontina is around 16°C.
