Since 50 years the members of the
Milk and Fontina
Cooperative Producers runs the maturing
process of Fontina in special caves,
and since then the
trademark linked
to the attribution of the
Denomination of Protected Origin
guarantees the best quality.
The Cooperative objective has always
been to reach high quality, in order
to mix our growth and the constant
changing to the total respect of the
tradition: still today every cheese
is handled for about ten times
during the maturing process.
Only when the cheeses have reached
the optimal maturing we request the
branding and we suggest them to the
customers.
The DOP Fontina distinguish herself
among other mountain cheeses for his
soft and elastic consistency, the
paste is melting, strongly fragrant.
The round and levelled cheese shape
weights approximately 8-9 kgs. The
cheese rind, which is naturally
produced in our warehouses, is thin
and unctuous and has to be obviously
removed when tasted.
We suggest to taste our DOP Fontina
as a delicious cheese and also as
noble ingredient in the cuisine.
