Besides the Saint Christophe's seat
the Cooperative counts also eight
cheese maturing warehouses excavated
in the rocks which can store about
200.000 cheeses.
Most part of the storehouses were
former military depots used in the
last world conflict.
The storehouse of Valpelline
deserves a special attention because
its the wider cheese maturing
structure of Aosta Valley with a
total capacity of 200.000 cheeses.
This warehouse was once the adit for
an old copper mine exploited until
1946 and still today the handling of
the chesees is done by using the
same tracks used once for the
mineral.
